Homemade Nata De Coco

Nata de coco is one of the ingredients of the fruit salad which is on demand during town and barrio fiestas. To add flavor, nata de coco is also mixed in making ice candy. A creative entrepreneur couple from San Isidro, Mr. and Mrs. Reynaldo Armiza ( nee Wilma Alcayde ) supply these needs locally by making it at home.

The couple agreed to publish the basic steps they follow to come up with the finished product, nata.

 

 

Preparing and assembling the ingredients: water, coconut milk, sugar, glacial acetic acid, mother liquor (starter).

Mixing the above ingredients.

Pouring the mixed ingredients into a plastic tray

Checking the tray after 7 days whether or not it is ready for harvesting.

Actual harvest. After the harvest the nata is being washed and then sliced.

Nata de coco is ready to be cooked.

Finished product is a sweetened nata ( yellow) ready to be used for fruit salad or ice candy.

Frozen ice candy with nata awaiting to be distributed in the market locally.
